Healthy & Quick Family Meal- Mild Vegetable Curry – by Alana

Mild Vegetable Curry 

Serves 4 (with leftovers)

Cooking Time: 40min Prep: 20min

Ingredients:

  • 1 leek (halved and thinly sliced)
  • 1 capsicum (sliced)
  • 2 carrots (halved and sliced)
  • ¼ cabbage (sliced)
  • 1 broccoli (sliced)
  • 2 cup frozen peas & corn
  • X1 veg stock cube
  • 275ml Coconut cream
  • ½ tsp cumin
  • 2 tsp mild curry powder
  • Salt & Pepper to taste
  • 1.5 cups water
  • 1 T Olive Oil

Directions:

  1. Heat oil on moderate heat in a large pan. 
  2. Add Leek, capsicum, carrots to the pan and stir fry until starting to soften (turn down if required, so as not to burn).
  3. Add stock cube, spices and seasoning until fragrant.
  4. Add water and increase the heat until simmering.
  5. Add cabbage, broccoli frozen veg.
  6. Simmer until the water reduces a little (add more if it dries out).
  7. Add coconut cream and continue to cook to your liking.
  8. Serve with rice or cauliflower mash.

P.S Add 400g diced chicken first, before step 2, if its required!!
