Mild Vegetable Curry
Serves 4 (with leftovers)
Cooking Time: 40min Prep: 20min
Ingredients:
- 1 leek (halved and thinly sliced)
- 1 capsicum (sliced)
- 2 carrots (halved and sliced)
- ¼ cabbage (sliced)
- 1 broccoli (sliced)
- 2 cup frozen peas & corn
- X1 veg stock cube
- 275ml Coconut cream
- ½ tsp cumin
- 2 tsp mild curry powder
- Salt & Pepper to taste
- 1.5 cups water
- 1 T Olive Oil
Directions:
- Heat oil on moderate heat in a large pan.
- Add Leek, capsicum, carrots to the pan and stir fry until starting to soften (turn down if required, so as not to burn).
- Add stock cube, spices and seasoning until fragrant.
- Add water and increase the heat until simmering.
- Add cabbage, broccoli frozen veg.
- Simmer until the water reduces a little (add more if it dries out).
- Add coconut cream and continue to cook to your liking.
- Serve with rice or cauliflower mash.
P.S Add 400g diced chicken first, before step 2, if its required!!
